Freezer meals for busy parents.


I don’t know about you but I have been very busy around here.  My husband and I sold our home recently and had two weeks to be out of our home, on top of that we got guardianship of my two nephews, so we now have  4,5,6,7&8 year olds. 

Even though we are very busy and have our hands very full we still need to eat, however cooking can be a pain when you don’t have the time.  I thankfully had some of my freezer meals to get me through this time in my life and I couldn’t be more grateful.

If you have not done freezer meals before or you are just looking for some new recipes look no further I am here to help you.


Here is a list of some great freezer meals for you.

Creamy Italian Chicken

3-4 Skinless Chicken Breasts

8oz cream cheese softened

1 can of cream of chicken

1 dry packet of Italian Seasoning

 

Mix together cream cheese, can of cream of chicken and seasoning in bag. Add chicken. Seal and Freeze. When ready to use thaw overnight and cook on low for 4-6 hours in crockpot.

 

Sweet Soy Chicken

2 1/2 pounds of chicken

1 cup honey

¾ cup soy sauce

2 T crushed garlic

1 teaspoon of ginger

 

Warm Marinade ingredients together in microwave until honey is melted. Pour over chicken in freezer bag. Label and freeze. Thaw overnight when ready to use. Pour into baking dish, cover and bake for 30 mins at 350 degrees. Uncover, turn and bake additional 30 minutes.

 

Herbed Chicken

2 lbs chicken breasts

1 can cream of mushroom

1 t lemon zest

1 ½ t lemon juice

½ t salt

1 t dried basil

1 t oregano

Place chicken in freezer bag. Combine ingredients and pour over check. Label and freeze. Thaw overnight when ready. Cook at 350 degrees covered in baking dish treated with nonstick spray.

Rustic Slow Cooker Chicken

1.5 lbs of Chicken

1 medium onion- wedged

2 cups baby carrots

½ cup water

1 T Seasoned Salt

2 t parsley

½ t pepper

Items that do not get frozen-

1.5 lbs red potatoes- halved

3 T cornstarch

½ cup milk

 

Place all top ingredients in freezer bag. Label and freeze. When ready thaw overnight – add to crockpot with potatoes. Cook for 6 hours. Whisk cornstarch into mild and add to slow cooker. Cook at high for 15 more minutes.

 

Lime Garlic Chicken

1.5 lbs chicken

4 T fresh lime juice

1 1/2cups chicken broth

2 garlic gloves- finely chopped

½ t thyme

2 T butter

Pepper to taste.

Combine all ingredients in freezer bag. Lave and freeze. Thaw overnight when ready to use. Cook on low for 6-8 hours in crockpot.  

 

 

 

Chicken Cacciatore

1 lb chicken

1 26 oz jar of vegetable style spaghetti sauce

1 zucchini

1 green pepper- chopped

1 sweet onion- chopped

Place all ingredients in freezer bag, label and freeze. Thaw overnight when ready to use. Coole on low for 6-8 hours in crockpot. Serve over spaghetti noodles.

Cilantro Lime Chicken

1 ½ lbs of Chicken

Juice from 2 limes

1 bunch of fresh cilantro-chopped

1 (16 oz) bad of frozen corn

2 minced garlic gloves

½ red onion- chopped

1 can of black beans

1 t cumin

Salt and pepper to taste

Place all ingredients in freezer bag, label and freeze. When ready thaw overnight. Cook on low for 8 hours. Serve with tortillas and toppings.

Lemon Chicken

2 lbs chicken breasts

1 t thyme

1 t salt

½ t pepper

¼ t crushed garlic

1/3 cup lemon juice

Place ingredients in freezer bag, label and freeze. Thaw overnight when ready to use. Cook at 450 degrees in baking dish treated with nonstick spray- pour liquid over chicken. Bake 20 minutes, turn and bake 15-20 more. Serve with rice.

Asian Chicken

1 lb chicken breasts

½ cup soy sauce

½ cup sugar

1 ¼ T red wine vinegar

2 t vegetable oil

½ t minced garlic

¾ t ground ginger

Mix all ingredients in freezer bag, label and freeze. Thaw overnight when ready to use. Bake at 350 degrees for 35 minutes. Serve with rice.  

 

Sopa de Maiz

2 cups chicken broth

2 boneless chicken breast

16 oz bag of frozen corn

½ t cumin

½ t crushed garlic

2 chicken bouillon cubes

1 4 oz can of diced chilies

1 cup milk**

Fritos/tomatoes/avocado/sour cream for toppings**

Salt and pepper to taste

Combine ingredients (expect milk and toppings) in 6 cup container- label and freeze. Thaw overnight when ready to use. Add milk and simmer until soup is heated. In individual bowls layer fritos then tomatoes and avocados. Pour soup over it and top with sour cream.

 

 

 

 

 

Mustard Chicken

3 lbs chicken

3 T white vinegar

4 t Worcestershire sauce

1 t thyme

Add all ingredients in bag, label and freeze. When ready thaw overnight. Cook at 350 degrees for 30 minutes or until no longer pink in center.  

 

Sweet and Sour Beef

2 lbs of stir fry beef cubed

1 bottle of sweet and sour sauce

1 cup shredded carrots

2 T shredded yellow onion- drained (place on paper towel and pat dry)

Place ingredients in freezer bag. Label and freeze. Thaw overnight when ready to use. Cook on low for 6-8 hours. Serve with stir fry veggies and rice.

 

Mexican – style Shredded Beef

2 lb top round roast

1 large onion- chopped

4 gloves of garlic

2 T apple cider vinegar

2 8oz cans of tomato sauce

1 ½ t chili powder

½ t garlic salt

2 T lime juice

Place ingredients in freezer bag. Label and freeze. When ready to use thaw overnight. Cook on low for 6 hours in crockpot. Remove meat and shred. Strain liquid, removing onions. Place meat back in liquid and cook additional 30 minutes. Serve with tortillas and toppings.

 

 

Hearty Beef Stew

1 lb beef stew cubes

4 carrots, sliced

4 red potatoes- cut into large cubes

1 dry onion soup mix packet

2 cans of cream of mushroom soup

1 8 oz can of tomato sauce

1 10oz package of frozen peas

Place all ingredients in freezer bag- label and freeze. When ready thaw overnight and cook on low for 8-10 hours in crockpot.
Freezer meals simplify our life on busy days so it is very well worth the time investment.  

You can also double recipes when you cook, one for now and one for later to go in the freezer.
