St. Patrick’s day cupcakes 

Get in the St. Patrick’s day  spirit with these adorable pot of gold cupcakes that the kids are sure to love!

I know lots of you have way busy schedules just like us, yet you want to do fun cute things with your kids, but you may not always have enough time in the day.  Well these cupcakes are perfect for you!

I know what your thinking. wait box cake mix…  yes these taste great and we want to work smarter not harder.

What you’ll need

•box cake mix (any kind, we chose chocolate for these)

•4 eggs

•1 cup melted butter

•1 cup milk

•2tsp vanilla

For the frosting

•1 cup softened butter

•4 cups powered sugar

•2 Tbls milk

•2 tsp vanilla extract

•1/4 tsp almond extract

For the decorations

•airheads extreme rainbow belts


•gold sprinkles

Preheat your oven to 350′

Add all ingredients in your mixer and mix away.

Your mix should be nice and creamy like this.

Add cupcake liners to your tins and fill 2/3 of the way full.

Place in the oven and turn your oven down to 325. Set the timer for 25 minutes.

Now for the frosting

Start by mixing your softened butter for about 2 minutes so it gets nice and creamy.

Then add the powdered sugar and mix slowly until well blended, then add your milk, vanilla extract, and almond extract.  Mix well.

Now you can pipe your frosting on your cupcakes and let them sit for a bit to harden up just a drop.  Also we found it best to let the airheads sit out for a bit so they are not so bendy.

Next you will want to prep your Rollos, you can just pipe a bit of frosting and then dip in gold sprinkles, or you can just use the rollos unopened.

Then you will want to cut your airheads in half so they are more stable.  Now just decorate.

I am so happy with how these turned out, wouldn’t you say they are pretty adorable?!?

There you have it, a simple cupcake that looks like you spent forever on them.
